Soup Season: Simple Tomato Basil Soup
It’s a dreary day in Oklahoma, it’s 32° out and that’s the high for today. But that’s okay, because there are warmer days ahead.
There is something so comforting about a cold & dreary day, when you have no plans on the agenda besides curling up on the couch to watch a true crime documentary. The only thing that can make it a touch better is adding a bowl of homemade soup. We’ve been living off of chicken tortilla soup, green chili, vegetable soup and this really easy tomato basil soup.
*If you have tomatoes one hand or would prefer to use fresh produce, replace each can with 10-12 tomatoes; crush and puree for desired consistency!
Simple Tomato Basil Soup
Ingredients:
1 (28oz) can crushed tomatoes
1 (28oz) can tomato sauce
1 (14.5oz) can chicken broth
1 cup heavy whipping cream
Handful fresh basil leaves OR dried basil
1 tsp sugar
Instructions:
Over medium-high heat, bring the chicken broth and tomatoes to a boil in a large soup pot or dutch oven.
Add the sugar and basil, reduce to medium fire, and let simmer for 20 minutes.
Reduce heat again to low fire and slowly stir in the whipping cream until soup is creamy.
Top with fresh basil (or dried) and cheese. Enjoy!
